I understand that certainSacraments such as baptism and holy orders leave an indelible mark on the soul.

No, once a spouse dies, the other can get remarried. If marriage left an inedible mark on the soul, it could not be repeated ever.
There are two kinds of sacraments, the sacraments of initiation (baptism, confirmation, and ordination) and the rest (whatever they might be called), only the sacraments of initiation cannot be repeated, the other four namely confession, the Eucharist, matrimony and extreme unction, can be repeated.

Holy orders is not a sacrament of initiation. At least according to the CCC, the sacraments of initiation are baptism, confirmation, and Holy Communion.
Orders and matrimony are sacraments at the service of the community.
But Doom is correct that marriage does not leave a mark on the soul and so can be repeated if the previous marriage bond is truly dissolved.
