Then, raising his hand, Moses struck the rock twice with his staff, and water gushed out in abundance for the people and their livestock to drink.
But the LORD said to Moses and Aaron, “Because you were not faithful to me in showing forth my sanctity before the children of Israel,
you shall not lead this community into the land I will give them.”

The explanation for not entering the promised land that I had heard:

This was because the rock symbolized Christ (cf. 1 Cor. 10:4) who was stuck (died) only once on the the cross. After that, we just 'speak' to the "Rock" to get the benefit of that once-for-all sacrifice.

My question is, 'what is the source for that'? ECF? Someone else?

Source for what? That Moses' sinned by not talking to the rock like God asked, but striking it instead? That is what it says in Deuteronomy.

Yes, I know but my question relates to the idea that striking the rock twice symbolized that Jesus only had to die once, not twice. I'm just wondering where that originated.

Probably from your priest's imagination, it is not only quite far from a traditional view, I think it is probably comopletely novel.
