Jimmy Akin on ... Pizza???

That is right! Your favorite (or not) apologist has been on a weight loss journey and has posted a video on his low-carb/low-cal thin-crust pizza technique.

I gave it a try. Used Mission brand Zero Net Carbs flour tortillas and Great Value Organic spray olive oil (it did not have the added ingredients that others have)

My microwave takes more like 3-4 minutes to dry out the tortillas to a crisp state. Piercing the bubbles is important, I took the time with a small paring knife to pierce only the bubbles and not go through the tortilla and they did great. Last evening, DS did it again, he took a skewer and did many little poke holes through the tortilla resulting in a final product with HUGE bubbles.

I used the suggested Rao pizza sauce, it is freaking delicious - I'd eat it with a spoon!!

These are now a regular rotation thing in my house! They are so nice and crispy that you hold them and they do not flop over, they are a very satisfying crunch - better than any chain delivery thin-crust pizza when it comes to lasting crispness. They are still crisp when cold.

Rao has a line of frozen foods that are great!

I saw that video, but he lost me when he said Rao is chunky. I like my "red sauce" (as the Italians call it). It's smooth, as opposed to "tomato sauce" or "Marinara" which are usually chunky.

Huh, I could have sworn he said he likes the Prego sausage because it is so chunky (I am also NOT a chunky fan). The Rao Pizza Sauce that I am using is not at all chunky

Rao marinara is definitely chunky, Rao pizza sauce I'm guessing is not. It's also $$$

Granted, I am not feeding a large family, I am feeding me and sometimes my adult son. The jar of sauce was 4.55 at my WalMart. Add in the price of the tortillas and the cheese, that first grocery run was still less than having a pizza delivered + tip + our freaky high prepared food tax. I did splurge a bit and buy pre-shred cheese, arthritis in my hands is getting really bad. Now, I have the makings for several more meals:

4.55 Sauce
3.58 Tortillas
2.74 shred parm
2.24 shred moz

For below $15 I will get to satisfy that pizza urge for at least 7 times!

oh sure, but I'm used to paying $1.50-$2 a can for Cento or Dom Pepino.
